Nothing beats good BBQ. One of my new favorites is pork spare ribs, seasoned with Lysanders Chipotle Rub and slow cooked on the grill. While I have a smoker and enjoy using it, I’ve become a little “burnt” out on the smoke recently. I find a simple smooth char flavor from the grill is enough to make a perfect piece of meat. Top it off with the “secret” sauce and your in business.

When prepping these, it’s all about a good sear. I like to rotate them on a high flame until they begin to crisp. I’ll then move them to indirect heat up on the rack for around 2 hours, then finish with the sauce for 30 minutes of basting on indirect heat.
